You can manage default document following below steps after logging into Plesk control panel:
1) Navigate to Websites & Domains
2) Click on Show Advanced Operations (if it is hidden)
3) Click on Virtual DirectoriesClick on Manage beside your website name
4) You will find option to change default document for your website here.
